Baillieu Vineyard Shiraz is a cool climate wine from the estate's Bulldog Run property at Merricks North. The vines, planted in 2001, grow in well drained, deep loamy soils.

The fruit is destemmed for a few days of maceration before fermentation begins. Once the wine is sugar dry, it is left on skins for a further two weeks to extract fine tannins.

The wine is pressed to one quarter new French oak barrels for malolactic fermentation. It matures for 12 months, racked once in late winter and returned to barrel.

Deep purple, Baillieu Vineyard Shiraz has intense fruit flavours, peppery notes and complexity from its time in oak. Cellaring potential is 10 years.
